  •   Head of baby gem lettuce
  • ml olive oil
  •   lemon, juiced
  • g Country Range 5 Bean Salad
  •   red onion, finley sliced
  •   spring onion sliced
  • g green beans
  •   cherry tomatoes
  • g cucumber
  •   tbsp mint
  •   tbsp parsley
  •   pinch salt & pepper to taste

    Step 1

    To make the salad – mix together the drained 5 beans, finely sliced red onion, qtr’d cherry tomatoes, sliced cucumber, sliced cooked green beans, lemon juice and 50ml of olive oil

    Add the herbs and season to taste with salt and pepper

    Arrange the lettuce leaves around the edge of a bowl and fill the centre with the salad.
