Step 1
Infuse thyme with warmed honey overnight. Pass through a sieve.

Portion the halloumi into rectangles and fry until golden.

In the final stages of cooking drizzle, a little honey into the pan and allow to caramelise onto the halloumi.

Garnish with fresh thyme leaves and smoked Maldon Sea salt
