  • g Potatoes

  • ml Vegetable Oil
  • g Mustard Seeds
  • g Curry Leaves
  • g Coriander
  • g Cumin Seeds
  • g Garam Masala
  •   Masala Magic

For the Batter

  • g Flour
  • g ajwain seeds
  • g turmeric powder
  • g salt
  • g baking powder
  • g ginger purée
  • g Garlic Puree
  • ml Water

For assembly

To Make The Vada

    Step 1

    Boil the potatoes until just tender, drain thoroughly and mash lightly.

    Step 2

    Heat oil over medium heat and add mustard seeds, curry leaves and cumin seeds. Allow to crackle then pour over the potatoes.

    Add squeezed spinach, chopped coriander, and MAGGI® Masala Magic.

    Mix gently until evenly combined then shape into 10 uniform patties

For the batter

    combine garam flour, ajwain, turmeric, salt and baking powder, then add ginger and garlic.

    Gradually whisk in water to form a batter.

For assembly

    1. Dip each potato patty into batter, then fry for 3-4 minutes until golden and crisp. Drain any excess oil.
