Jam Jar Trifles

These jam jar trifles are a playful, individual take on a classic layered dessert, combining light sponge, fruit, and cream into perfectly portioned treats. Built in small jars, each serving reveals colourful layers that are as visually appealing as they are satisfying to eat.

  •   madeira cake
  •   tbsp sherry (optional)
  • g gelatine leaves
  • ml ready-made custard
  • g Opies Summer Berry Compote
  •   gelatine leaves (for compote)
  • ml whipping cream
  •   tsp Opies Stemmed Maraschino Cherry syrup (reserved from the jar)
  •   portion Flaked almonds
  •   Opies Stemmed Maraschino Cherries (for garnish)
  •   empty Opies jars

    Step 1

    Warm the Opies Summer Berry Compote in a small saucepan over low heat, then remove from heat. Soak 2 gelatine leaves in cold water until soft. Squeeze out excess water and stir into the warm compote until dissolved. Leave to cool completely.

    Using a pastry cutter the same diameter as the jar, cut out 3cm-thick disks of madeira cake. Place a cake disk at the bottom of each Opies jar. Mix the sherry (if using) with 2 tsp Opies cherry syrup and drizzle over the cake to soak.

    Spoon the cooled compote over the cake and place in the fridge until set (about 30 minutes). Once set, spoon the custard on top.

    Whip the cream until soft peaks form. Spoon or pipe over the custard layer. Keep in the fridge until ready to serve.

    Lightly toast the flaked almonds in a dry pan over low heat until golden. Just before serving, sprinkle the toasted almonds over the trifles. Crown with an Opies Stemmed Maraschino Cherry
