One of the key trends for 2024 is the desire for eating occasions that transport you to another part of the world, so it’s no surprise that Mediterranean cuisine is hot this year, particularly in the summer months, when we want nothing more than to be transported to a Greek taverna by the sea, or a pintxo bar in a Spanish town. We delve into the winning elements of this cuisine that will be a hit on menus this summer.

TAPAS

Spanish ‘picky bits’ are a big draw, with authentic ingredients such as padrón peppers, Manchego, jamón and anchovies being popular, alongside tapas favourites such as pan con tomate, patatas bravas and croquetas.

RUSTIC

The trend for comforting classics extends to familiar Mediterranean flavours in rustic one-pot form, such as paella, summery stews and moussaka.

GREEK

It doesn’t just stop at moussaka, as all things Greek are a hit, from tasty dips such as tzatziki, taramasalata and hummus to street food favourites souvlaki, halloumi fries and gyros, not to mention feta every which way – whipped, deep fried, on salads to name but a few.

PORTUGUESE

Not technically on the Mediterranean coast, but the flavours of Portugal are associated with this cuisine and are very much on the rise. Think piri piri chicken, salt cod fritters (bacalhau), feijoada (bean stew) and all of that lovely fresh seafood. Take advantage of the warm weather to add some freshly grilled fish to your specials board for the ultimate in Mediterranean smells and flavours.

A SWEET FINISH

Finally, give your desserts menu the Mediterranean treatment with tempting treats such as pastel de nata, Basque cheesecake, churros, flan, baklava and loukoumades (Greek doughnuts).
