Lentil & Herb Stuffing Balls

Tender lentil‑based stuffing balls infused with a fragrant blend of fresh herbs, caramelised onions, and subtle spices. Baked until crisp on the outside and soft within, they deliver a hearty, savoury bite with earthy depth from the lentils and bright, aromatic lift from parsley, thyme, and sage. Ingredients

  • g Country Range Sunflower Seeds
  • g Country Range Natural Breadcrumbs (for binding)
  •   tsp Country Range Dried Garlic Granules
  • g pine nuts
  •   onion, finely chopped
  • g Mushrooms
  • g baby spinach
  •   tbsp fresh parsley
  •   tbsp fresh thyme
  •   tbsp fresh rosemary
  •   tbsp fresh sage
  •   egg
  •   tbsp coconut oil

    Step 1

    Preheat the oven to 180°C. Toast the pine nuts for 5–10 minutes.

    Heat the oil in a pan over medium heat. Add the onion and mushrooms to a pan and fry until browned.

    Blitz the drained lentils, sautéed veggies, toasted pine nuts, sunflower seeds, herbs, spinach, garlic granules, breadcrumbs and egg.

    Season and then roll into bite-sized balls.

    Bake for 20–25 minutes until golden.
