  • g Country Range Wholegrain Rice
  • ml Olive Oil
  •   Lemon Juice
  •   tbsp parsley
  •   tbsp mint
  •   tbsp Chives
  •   tsp Country Range Cajun Spice

  •   Red onion Diced
  •   Yellow pepper diced
  • g green pepper diced
  •   cherry tomatoes cut into half
  •   courgette
  • g sliced spring onions
  •   tbsp mint
  •   tbsp parsley
  • ml Olive Oil
  • ml Red Wine Vinegar
  •   salt & pepper taste

    Step 1

    Pre heat the oven to 200c / 180c fan

    Mix together the diced vegetables with 50ml olive oil and season with salt and pepper

    Roast in the oven for 8 mins, mix in the mint and parsley, add the red wine vinegar and keep warm

    Cook the wholegrain rice as per instructions, drain well and add the olive oil, spices, herbs, lemon juice and season with salt and pepper Serve with the roasted vegetables.
