  • g Country Range Gourmet Fish Goujons
  •   small soft flour tortillas
  •   Little Gem lettuce, shredded
  • g feta cheese, crumbled
  •   green chillies, finely sliced
  •   limes, cut into wedges
  •   ripe tomatoes, finely diced
  • g red onion, finely diced
  •   tbsp chopped fresh coriander
  •   limes, juiced
  •   pinch Salt and freshly ground black pepper, to taste
  •   ripe avocados
  •   small garlic clove, crushed
  •   limes, cut into wedges
  •   sprinkle Chilli seasoning or smoked paprika (optional)

    Step 1

    Prepare the salsa by mixing the tomatoes, red onion, 1 tbsp coriander and 1 lime (juice). Season to taste and set aside.

    Mash the avocados with the remaining lime juice, garlic and coriander to make the guacamole. Season and set aside.

    Cook the Country Range Gourmet Fish Goujons according to the pack instructions until golden and crispy.

    Warm the tortillas in a dry pan or microwave until soft and pliable.

    Fill each tortilla with shredded lettuce, fish goujons, a spoonful of salsa and guacamole, then top with crumbled feta and sliced green chillies.
