Samuel Adams and Aged Cheddar Fondue

  •   4 tbsp whole salted butter
  •   4 tbsp spanish onion, small diced
  • g flour
  • g Samuel Adams Boston Lager Beer
  •   2 cups milk, heated
  • g aged yellow cheddar cheese, shredded
  •   2 tbsp whole grain mustard
  •   Kosher/Sea Salt and black pepper

    Step 1

    In a saucepan, melt whole butter and add onions.

    Cook onions until translucent.

    Whisk in flour and mix until mixture turns blond.

    Add milk and continue to whisk until incorporated well.

    Simmer, stirring for about 10 minutes or until the sauce thickens.

    Remove from the heat and whisk in the beer, cheddar cheese and mustard.

    Season with salt and pepper.

    Check/adjust seasoning and consistency if necessary.
