  • g pork fillet medallions
  •   tbsp Country Range Piri Piri Seasoning
  •   tbsp oil
  • g white cabbage, shredded
  • g red onion, peeled and finely sliced
  • g large carrot, peeled and grated
  •   tbsp Country Range Light Mayonnaise
  •   tbsp Country Range Wholegrain Mustard

    Step 1

    Mix the coleslaw ingredients together.

    Mix the pork medallions with Piri Piri Seasoning.

    Heat the oil in a frying pan and fry the pork for 3-5 minutes each side until cooked through.

    Serve Piri Piri pork with the mustard coleslaw and Country Range Seasoned Wedges. Garnish with chilli and coriander.
