Mix the coleslaw ingredients together.

Mix the pork medallions with Piri Piri Seasoning.

Heat the oil in a frying pan and fry the pork for 3-5 minutes each side until cooked through.

Serve Piri Piri pork with the mustard coleslaw and Country Range Seasoned Wedges. Garnish with chilli and coriander.
