Step 1
Preheat the oven to 180oC/160oC fan/gas mark 4.

Place the dates and water into a saucepan and simmer for 5 minutes until the dates are very soft. Cool a little and then purée.

Melt the butter in a saucepan or microwave on low heat.

Remove from the heat and stir in the cocoa powder.

Beat the sugar, eggs and vanilla essence together and stir into the cocoa mix. Add the date purée, ground almonds and flour and mix until all the ingredients are combined.

Pour the brownie batter into a greased and lined 20cm x 30cm tin.

Step 1
To make the cookie, beat the butter and sugar together and then beat in the egg. Add the Corn flakes, flour, raisins and chocolate chips if using and mix to form a soft cookie dough.

Scatter pieces of cookie dough into the brownie mixture, or layer on top.

Bake for 20-25 minutes until cooked through.

Cool and then portion into 10 bars or stamp out with a novelty cutter and serve with a portion of fresh fruit slices.

Chef’s tip: Add chopped mixed nuts to the cookie layer instead of raisins for a tasty alternative.
