g Country Range Medium Egg Noodles

Handful chopped coriander

g diced tofu

Thumb sized piece ginger finely sliced into matchsticks

Step 1
Cook the egg noodles as per pack and refresh.

Prep all of the vegetables.

Step 3
Place the noodles in a pot. Top with the vegetables, ginger and coriander and pour over the prepared hot broth mix to warm the noodles and veg.

Add the diced tofu.

Serve with a squeeze of lime.
