  • ml Whole milk
  • g DGF trimoline
  • g Stabiliser 2000
  • g Caster sugar
  • g deZaan crimson red cocoa powder
  • g deZaan Quito oro cocoa mass drops

Method

    Step 1

    In a bowl add the sugar, stabiliser, cocoa powder and trimoline. Set aside until ready to use.

    Step 2

    Heat milk to 45ºc. Once at 45ºc add in sugar mixture.

    Mix thoroughly with an immersion blender. .
  • 4

    Step 4

    Cook ice cream base to 81-82ºc.

    Step 5

    Pour ice cream base over the cocoa mass. Blend with immersion blender for best results.

    Step 6

    Cool and let rest overnight for best results.

    Step 7

    Before churning, blend base with immersion blender.

    Churn to preference
