ml Gin and Tonic Jelly

g Sliced Mandarins

Step 1
Make the jelly as per pack instructions but swap out the water with 75ml gin and 225ml tonic

Step 2
Place the sliced mandarin and the diced sponge fingers equally into 2 gin glasses and pour over the cool liquid jelly

Step 3
Place in the fridge to set and then top with some ready made custard

Top the custard with whipped cream

Finally garnish with some fresh mint and grated mandarin zest
