Curried Mince on Toast

A hearty, spice-rich beef mince cooked with tomatoes, curry powder, garlic, and herbs, served on buttered toast and topped with a fried egg. Finished with slices of fried tomato and a spoonful of mango chutney, this bold, flavour-packed dish is perfect for brunch or a comforting lunch.

  •   Pints Country Range Chopped Tomatoes
  •   dsp Country Range Dried Mixed Herbs
  •   heaped dsp Country Range Ground Cumin
  •   heaped dsp Country Range Curry Powder
  • ml Vegetable Oil
  •   full tube Tomato Purée
  •   Large White Onions, finely chopped
  •   Fresh Garlic Cloves, crushed
  •   Gluten Free Stock Cubes
  • g Beef Mince (best quality)
  •   Salt and Pepper to taste
  •   Eggs to Serve

    Step 1

    Fry onions in vegetable oil until soft and translucent. Add garlic and fry until fragrant for about 2 - 3 minutes.

    Add in the cumin and curry powder and gently fry for 3 minutes.

    Add the beef mince slowly, making sure that there are no huge clumps. Brown the mince, stirring as needed. Be careful not to burn it.

    Add the tomato purée once the mince has browned. Stir in evenly and cook for about 5 minutes.

    Add the chopped tomatoes, herbs, and stock cubes. If your mince mix is fairly dry at this point add in 500ml water. Get it up to boiling point for 5 minutes then simmer for 30 minutes.

    Add salt and pepper to taste. The mince shouldn’t be dry, just moist enough not to make the toast soggy.

    To serve, fry your egg and add a generous helping of mince to buttered toast, placing your fried egg on top. We garnish with slices of fried tomato and a pot of mango chutney.

  • 8 Gluten Free Stock Cubes
  • 5000 g Beef Mince (best quality)
  • Salt and Pepper to taste
