Lay the slices of pancetta on a baking tray and grill until crispy

Beat 3 eggs together in a small bowl

Add a knob of butter to a pan and allow to melt on a medium heat

Add the eggs, season with salt and pepper and stir until scrambled

Slice the bagels in half and lay out on a baking tray

Butter the bagel halves and top with a slice of mature cheddar

Add a good helping of the scrambled egg mixture

Top with a couple of slices of the crispy pancetta and replace the bagel lid
