Columbian Empañadas

Pastry

  • g Country Range Multi-Purpose Shortcrust Pastry Mix
  •   Country Range Rapeseed Oil, for frying

Filling

  • g diced sweet potato
  •   spring onions
  •   chopped tomato
  • g Country Range Garlic Granules
  •   A small bunch coriander, chopped
  • g mince
  •   quarter of a red pepper, diced
  • g Country Range Choice Garden Peas
  •   tsp Country Range Ground Cumin
  •   tsp Country Range Ground Turmeric
  •   tsp Country Range Dried Oregano
  •   tbsp Country Range Jalapeño chillies, chopped
  •   tbsp Country Range Olive-Pomace Oil

Egg Wash

  •   Country Range Free Range Medium Egg
  •   tsp Country Range Ground Turmeric

Sprinkles

  •   Country Range Whole Cumin
  •   Country Range Dried Oregano

    Step 1

    Cook the diced potatoes in water until tender, about 10 minutes.

    Step 2

    In a large heavy skillet, heat one tablespoon oil and add mince, spices and gently fry for 10 minutes.

    Add spring onions, tomatoes, garlic, red pepper, chilli, peas and coriander and season. Allow to cool down.

    Roll out the pastry and cut 4 even sized discs.

    Place a spoonful of mince in the centre, fold over the pastry and crimp with a fork to have 4 moon shaped pasties.

    Brush with egg wash and sprinkle with cumin and oregano.

    With a slotted spoon gently lower empañada into hot oil and cook for two minutes, turning about halfway through (you'll need to cook in batches).

    Drain on paper towelling and serve hot.
