Add the egg yolk to the milk and beat well.

Mix the flour and baking powder in a bowl, and gradually beat in the milk mixture (it will still be quite thick). Mix in the melted butter and then fold in the beaten egg white.

Heat a tablespoon of oil in a frying pan and add spoonfuls of the pancake mixture to the pan. Cook over a moderate heat until the top dries out slightly. Flip the pancakes and cook the other side for about 45 seconds to a minute. Repeat to cook the remaining pancakes.
