Aloo Dum

A hearty celebration of spice and comfort, Aloo Dum is a beloved dish of tender baby potatoes simmered slowly in a vibrant, aromatic gravy. The potatoes are first lightly fried to achieve a golden exterior, allowing them to soak up every layer of flavour as they cook. They’re then gently stewed in a silky sauce made from tomatoes, onions, yoghurt, and a fragrant blend of warming spices—cumin, coriander, Kashmiri chilli, cardamom, and garam masala.

Ingredients

  • g peeled and chopped maris pipers
  •   diced onion diced onion
  •   finley chopped fresh tomatoes finley chopped fresh tomatoes
  •   crushed cloves of garlic crushed cloves of garlic
  • g ghee
  •   tsp turmeric
  •   tsp Country Range Crushed Chillies
  •   tsp Country Range Garam Masala
  •   tsp mustard seeds
  •   tsp fenugreek seeds

    Step 1

    Par boil the large chunks of potatoes in salted boiling water

    In a large pan melt the ghee and add the turmeric, chili flakes, mustard seeds, fenugreek and garam masala and gently fry for 1 minute

    Add the diced onion and garlic and gently fry until soft

    Add the potatoes and chopped tomatoes with 100ml water and gently simmer until the potatoes are tender

    Season with salt to taste, garnish with chopped coriander and sliced green chillis and serve with naan breads and basmati rice

  • 0.25 tsp mustard seeds
  • 0.25 tsp fenugreek seeds
