  •   2 tbsp Sunflower Oil
  •   1 Medium Onion finely chopped
  •   1 Chopped red pepper
  •   1 tsp Cumin
  •   1 tsp paprika
  •   1 tsp oregano
  • g Winter vegetable mix (butternut squash, sweet potato, swede)
  • g Chopped tomatoes
  •   2-4 tbsp Lion Mexican Hot Adobo Sauce
  • g Can drain and rinsed mixed beans

Method

    Step 1

    Heat the oil in a large pan

    Step 2

    Add the chopped onion and soften for 2-3 minutes

    Step 3

    Add the red pepper and winter vegetable mix and cook for 2-3 minutes
  • 4

    Step 4

    Add the paprika and cumin and fry off for a couple of minutes

    Step 5

    Reduce the heat and add the chopped tomatoes, rinsed mixed beans, oregano and desired quantity of Lion Mexican Hot Adobo Sauce
