Ingredients

  • g onion, chopped
  • g cloves of garlic, crushed
  • g Country Range Tomato Soup Mix
  •   tsp cold water
  • g cucumber, peeled and diced
  • g green pepper, diced
  •   tbsp Country Range Tomato Paste
  •   tbsp parsley, chopped
  • g lemon, juice only

    Step 1

    Sauté the onion and garlic in a little oil until soft.

    Step 2

    Add sufficient cold water to the soup mix to make a smooth paste, add the remaining cold water. Add the onion and garlic and bring to the boil. Simmer gently for 10 minutes stirring occasionally. Leave to cool.

    Step 3

    Add all the remaining ingredients and liquidize to a smooth purée.

    Season to taste and chill for 3-4 hours.
