A different take on noodle salad - instead of the usual, this version is given a Korean twist thanks to the combination of Kikkoman Soy Sauce and Kikkoman Sesame Sauce. Not just a side dish but a real treat on its own.

ml Kikkoman Naturally Brewed Soy Sauce
ml Kikkoman Toasted Sesame Oil
ml Kikkoman Sesame Sauce
g soba noodles (1.27 kg cooked)
g red pepper, thinly sliced (7 x 1 cm)
g carrots, julienne cut
ml rice vinegar
g honey
g ginger, grated
g garlic, chopped
g spring onions, chopped
g cucumber, thinly sliced

Step 1
Cook the soba noodles for 4 minutes. Drain and rinse under cold water to stop the cooking process.

Mix the red peppers, carrots and cooked soba noodles in a large bowl.

In a separate bowl, whisk together the Kikkoman Soy Sauce, rice vinegar, Kikkoman Sesame Oil, honey, ginger, garlic and Kikkoman Sesame Sauce to make the dressing. Pour over the noodles and vegetables and toss until evenly coated.

Serve garnished with the chopped spring onions and cucumber.
