This recipe takes the classic panini to the next level with a rich, velvety rarebit made from brown ale, extra mature cheddar, and a punch of English mustard and Worcestershire sauce. Paired with tender shredded ham hock and even more melted cheddar, it delivers a warm, indulgent bite every time. Ingredients

  • ml Brown Ale
  • g Salted Butter
  • g Plain Flour
  • g Extra mature cheddar for the rarebit
  •   tsp English mustard
  •   tbsp Worcestershire sauce
  • g Shredded ham hock
  • g sliced extra mature cheddar for the sandwich

    Step 1

    Take a saucepan and place it over a medium heat; gently melt the butter until it begins to foam.

    Add the flour and stir everything together until there are no lumps; cook for a further minute.

    Whisk in the ale in small additions until a thick sauce has formed.

    Fold in the cheese, mustard & Worcestershire sauce to create a thick paste.

    Simmer very gently for a few minutes and then cool at room temperature.

    Slice open the panini.

    Spread rarebit over the bottom of the paninis.

    Cook the panini on a panini press for approximately 5 minutes until cheese is melted and hot in the centre.
