Gold and Ruby Custard

  • g Callebaut® Gold Chocolate Callets
  • g Callebaut® Ruby Chocolate Callets
  • g Salted caramel sauce
  • g Banana, chopped
  • g Custard (heated)
  • g Double cream
  • ml Lemon juice

Method

    Step 1

    Mix the banana with the caramel sauce

    Step 2

    Combine 160g custard with the gold chocolate. Once cool fold in half the whipped cream
  • 3

    Step 3

    Melt the ruby callets with lemon juice and mix with the remaining custard
  • 4

    Step 4

    Once cool, fold in the rest of the whipped cream
  • 5

    Step 5

    Layer the banana sauce, gold custard and ruby custard in glasses
