Step 1
Sweat the onions, celery and carrots for 10 minutes.

Add the garlic powder.

Add all the other ingredients and bring to the boil and simmer for 30 minutes.

Adjust the seasoning to taste and then blitz and serve over your favourite meats (American brisket, pork belly ribs and whole smoked chicken).
